Wilton Shortbread

1 1/2 cup butter, softened
1 cup sugar
1/4 teaspoon salt
6 egg yolks
2 teaspoons vanilla
4 cups flour

  1. Cream butter sugar and salt until light and fluffy.

  2. Add egg yolks one at a time, then vanilla mixing well after each addition.

  3. Add flour and mix just until combined.

  4. Divide dough into two equal portions, wrap and refrigerate at least 2 hours.

  5. When ready to bake, preheat oven to 375 degrees.

  6. Roll out half of the dough on floured board to between 1/8 and 1/4 inch thickness and cut with cookie cutters.

  7. Line cookie sheets with parchment paper and transfer cookies to cookie sheets.

  8. Bake for 12 minutes or so, until cookie just start to brown around the edges. Be careful not to over bake.

  9. Remove from oven, transfer cookies to wire racks and dust with powdered sugar or let cool, then decorate with frosting if desired.
