Scandinavian Jam Slices

1 cup butter

1/2 cup sugar

1 teaspoon vanilla extract

2 1/4 cups flour

1/2 cup finely chopped walnuts

 

    1. Cream butter, sugar and vanilla together until well blended.

    2. Gradually blend in flour to make a stiff dough.

    3. Mix in the walnuts.

    4. Divide dough into four portions; 

    5. On cookie sheets, shape into strips 12 inch long and 1 1/2 inches wide .

    6. Press a slight depression down the center of the entire length of the strip with your finger. Be careful not to make the indentation too deep so that the finished cookies donít break in the middle.

    7. Fill depression with 2 tablespoons jam for each strip.

    8. Sprinkle each strip with 1 tablespoon finely chopped walnuts.

    9. Bake at 350į for about 20 minutes. 

    10. Cool slightly while still on the cookie sheet, then slide carefully onto a wire rack using broad spatulas.

    11. Cut in diagonal slices when cold.

    Note: These cookies soften on standing from moisture in the jam, so they are best eaten within a day or two of baking.
