Peanut Butter Kisses

1/2 cup shortening or butter
1/2 cup chunky peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1-3/4 cups all-purpose flour
1/8 teaspoon baking soda
2 tablespoons milk
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
1 bag chocolate "kisses" (about 40)
 

  1. Preheat oven to 325

  2. In a large mixing bowl, beat the shortening and peanut butter with electric mixer on medium speed for about 30 seconds until blended.

  3. Add the granulated sugar and brown sugar and beat for several minutes until fluffy.

  4. Add the egg, milk, and vanilla. Beat well.

  5. In a medium mixing bowl, stir together flour, baking powder, salt, and baking soda.
    With the mixer on low speed, gradually add the flour mixture to peanut butter mixture. Beat well but do not overmix.

  6. For easier handling cover and chill about one hour.

  7. Preheat oven to 375 F.

  8. Shape dough into 1-inch balls.

  9. Roll in additional granulated sugar.

  10. Place about 2 inches apart on ungreased cookie sheets.

  11. Bake about 8-10 minutes, until almost done.

  12. Remove from oven and quickly press a chocolate "kiss" on top of each cookie.

  13. Return to oven for about 2 minutes more to finish baking

  14. When cool, store in an air tight container. These cookies freeze well.
