Chocolate Crinkles

3/4 vegetable oil

3/4 cup unsweetened cocoa powder

2 cups granulated sugar

4 eggs

2 teaspoons vanilla

2 cups flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup powdered sugar

 

    1. Mix oil, cocoa powder and granulated sugar.

    2. Blend in eggs one at a time until well blended.

    3. Add vanilla and stir in.

    4. Stir in flour, baking powder and salt.

    5. Cover tightly and chill in refrigerator for at least 4 hours.

    6. When you’re ready to bake them, preheat the oven to 350°.

    7. Place powdered sugar in a large flat bowl (a pie pan works great).

    8. Drop dough by teaspoons into powdered sugar.

    9. Roll in powdered sugar and shape into round balls.

    10. Roll in powdered sugar again to coat well.

    11. Place 2” apart on a greased cookie sheet.

    12. Bake 10 to 12 minutes.  Do not overbake!

    Makes about 6 dozen cookies. 

    Note: You can mix this dough ahead of time and keep in the refrigerator for up to a week to have ready to bake whenever you’d like.
