Everyday Buttermilk Waffles

 

1  cup flour

2 tsp baking powder

tsp soda

tsp salt

2 beaten egg yolks

2 cups buttermilk (almost 2 cups milk + 2 tbsp lemon juice)

 cup salad oil or melted butter

2 stiffly beaten egg whites

 

  1. Beat egg whites until stiff peaks form; set aside.

  2. Sift dry ingredients together in a large bowl.

  3. Combine yolks buttermilk and oil; stir into dry ingredients.

  4. Fold in egg whites leaving fluffy.

  5. Bake in waffle iron.
