Christine Joy’s Cornbread

 

Preheat oven to 375

Blend together:     1 egg

                           1 cup buttermilk

                           1 tsp salt

                           1 tsp soda

                           1/3 cup oil

                           2 tsp baking powder

                           2 tbsp sugar

Combine with        1 cup of cornmeal

                           1 cup unbleached flour

 

Bake in a well greased muffin tin for 12 to 15 minutes or square pan for 25 minutes.
