Midnight Salad
From Virginia Garrison (This salad got it's name because the first time we had it, we were visiting Grandma and Grandpa Garrison in Lakeland, Florida at Christmastime.  Grandma was making a big deal about having to "stay up late to make the salad" for Christmas dinner.  I thought this must be pretty special, and stayed up to observe the creation of this mysterious salad.  Much to my surprise, it was quick and easy with only two basic cooking skills required: opening cans and stirring!  Ever since this recipe has been fondly referred to as "Midnight Salad", and has become a family tradition  at holiday dinners.)

2 cans pineapple tidbits

3 cans mandarin oranges

1/2 bag mini marshmallows

8 oz sour cream (fat free sour cream works great but you might want to decrease the the amount a little bit so the salad isn't too "wet".)

(Be sure to stay up 'til midnight... then begin...)

Open cans of fruit and drain well.

Combine combine fruit and marshmallows in a large bowl and fold in sour cream.

Refrigerate for a few hours to let the flavors blend and allow the marshmallows absorb some of the moisture from the sour cream.

Stir gently before serving.
