Oatmeal-Protein Bars
 

Haven't figured the points on these,but it's HIGH; I need to do some experimentation with this recipe...


1 cup firmly packed brown sugar

3/4 cup granulated sugar
1  1/4cup water
1 cup whey protein powder
3 egg whites, lightly beaten
3 Tbsp. vegetable oil  (I use coconut oil or peanut oil for flavor)
3 tsp. vanilla
2  1/2 cups ground oatmeal flour
1  1/2 tsp. baking soda
1/2 tsp baking powder
1  1/2 tsp. ground cinnamon
1/2 tsp. salt (optional)
4 cups QuakerŽ Oats (quick or old fashioned, uncooked)
1  1/2 - 2 cups diced dried fruit, nuts, coconut or chips (try different combinations...)

  1. Heat oven to 350°F.

  2. In large bowl, combine sugars, water, protein powder, egg whites, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well.

  3.  Stir in oats and fruit/nuts/chips.

  4. Line a jelly roll pan with aluminum foil. Spread dough onto bottom of pan.

  5. Bake 45 minutes or until light golden brown.

  6. Cool completely on wire rack. Cut into bars.

  7. Store tightly covered. 


    Makes 2 dozen bars
