Cornmeal Muffins

1 cup yellow corn meal

1 cup flour

1/4 cup honey (or granulated sugar)

1 tablespoon baking powder

1 teaspoon salt

1 cup milk

1/3 cup vegetable oil

1 large egg, slightly beaten


Preheat oven to 400.  Spray muffin tin with Pam.

Combine corn meal, flour baking powder and salt in a medium bowl. Combine milk, honey (or sugar), egg and oil in a small bowl; mix well.  Add milk mixture to flour mixture; stir just until blended. 

Bake for 15 to 17minutes or until wooden pick inserted in center comes out clean. Let cool Server warm.


Note: For Corn Bread use an 8" square pan and bake for 22 to 24 minutes.
